Cava: How is it made?
Cava is a sparkling wine produced high quality in a total of 159 Spanish municipalities that, together, make up the production area of Cava in Spain. The development process differs from other wines by secondary fermentation, the renowned champenoise method, which involves the introduction into the bottle of liquor circulation (mixture of white wine, sugar and yeast) that cause the release of carbon dioxide and aroma that characterizes cavas.
To remove residual yeast, the bottles are placed inclined in order to collect sediment cap. Currently, this is done by freezing the neck of the bottle so that, by disclosing, the ice block is triggered. Lost in this process liquid is replaced with expedition liqueur white wine mixed with sugar. The resultant cava depend on the amount of sugar containing the liquor issue.
Types of Cava
Depending on the amount of sugar containing expedition liqueur added to the bottle after removal of sediments, there are different types of cava:
Brut Nature: no sugar added, naturally includes up to 3 g sugar.
Extra Brut: unsweetened expedition liqueur contains up to 6 grams of sugar.
Brut: contains up to 12 grams of sugar per liter.
Extra Dry: between 12 and 17 grams of sugar.
Dry: 17 to 32 g sugar.
Semiseco: between 32 and 50 grams of sugar per liter.
Sweet: contains more than 50 grams of sugar per liter.
