Tasting Notes:

  • Cherry-cherry color, dense tear.
  • In very complex nose, with many different notes: flowers, toasted, red fruit, some black fruit also ... some spicy touches, spice, some incense even.
  • In the mouth the tannins are still a little polished, but it has a great body and a good passage through the mouth. Great attack, very good structure and fairly balanced: ripe red and black fruit with spicy notes and great finish.

Elaboration and Aging

72.5% Fine, 21.5% Cabernet Sauvignon, 4.5% Syrah, 1% Malbec, 0.5% Merlot, Quinta Sardonia has a aging of 20 months in new French oak barrels and single use only. Clarification is performed with egg white and a light filtration before bottling.

Harvesting is one of the key points of the process. The same payment can be harvested up to three different times to ensure that the grapes arrive at the winery at its optimum.
