San Cobate Verdejo is a complex and balanced white wine, with saline, citric and mineral touches, where the wood is discreetly present. It is a Verdejo made in a traditional and artisanal way. It comes from San Cobate, an estate located in Ribera del Duero, Castilla y León, with vines of 40 years of age on average. It is a wine to be tasted unhurriedly, only in this way will it be possible to fully perceive the uniqueness of each of the plots that are spread over the 80 hectares.
TASTING NOTES:
Appearance: Golden yellow in colour, clean and bright.
Nose: Mineral, saline, marine aromas, with hints of citrus fruits.
Mouth: In the mouth it is unctuous, with a persistence that is accentuated by the acidity, offering a long and citric aftertaste.
DENOMINATION OF ORIGIN: Rueda.
WINEMAKING: Made with 100% Verdejo grape variety.
AGEING: Aged in French oak barrels.
CURIOSITIES: In its elaboration, we highlight its 100% handmade process, in which neither times nor temperatures are measured or noted. Only the sensations that each barrel leaves when tasted over time are taken into account. It is not filtered or clarified, the wine is left to rest in the bottle, without interruption, without haste, so that it can acquire a slow and respectful transformation.
