Tasting note
Quinta de la Quietud is in the middle of the La Jara vineyard, in Zamora. To the north is the town of Toro, perched on its golden cliffs and surrounded by contrasting vineyards and fruit trees. In this idyllic location, where the queen is the Tinta de Toro grape variety, Jean-François Hébrard, the winemaker and warehouse manager pampers his vineyard by following the guidelines of organic farming .
Quinta la Quietud has been certified for organic farming since 2002 , something they achieved in part thanks to their manual labor of the soil with fertilizer made up of sheep dung or a mixture of sheep/cow/horse as needed; treatments with infusions and decoctions of plants (nettle, valerian, lavender, etc.) and minerals (sulfur and copper).
Manual pre-pruning is also carried out from November to January, winter pruning in February and March, green pruning in May and vine removal/aeration in July. The harvest is always done manually and in the mornings in perforated boxes of 20 kg.
Fifth Stillness it will surely captivate you. A great wine from a small winery in Bull , that from 2002 has the certificate of Ecological cultivation , of octogenarian vines mostly bull ink pampered to the maximum to obtain a complex, powerful and elegant wine at the same time, which grows over time.
