CATA'S NOTES

  • View: bruised with a large cape, which denotes his youth.
  • Nose: aromas of fruit, jellies and blackberry jam, very well nuanced with a touch of licorice, which gives it a spicy character and complexity.
  • Mouth: Intense and powerful, with a very pleasant attack.

ELABORATION

  • Made 100% with Tinta de Toro.
  • Selection of old Tinta de Toro vineyards with low production, settled on sandy soils with a high rocky granite component and cultivated naturally.
  • Harvested manually. Transport in boxes and on small trailers.
  • Spontaneous fermentation in 15,000 kg concrete tanks, without exceeding 24ºC with native yeasts.
  • Malolactic fermentation in the same tanks.
  • Gentle and clarified non-aggressive filtering, to preserve its natural characteristics.
  • Two months of aging on its lees in concrete tanks.



CURIOSITIES

“Toro was one of the great discoveries of our trips in search of vineyards. In 2005 we found there the largest number of hundred-year-old and pre-phylloxera vineyards we had ever seen, with perfect sandy soils for the vine and an ideal continental climate to prevent the appearance of diseases. All these conditions had favored the maintenance of an ancestral viticulture, based on respect for natural rhythms.

But, without a doubt, the most special thing we found in Toro were its winegrowers, men and women with an emotional attachment to the land, to which they have dedicated effort, wisdom, respect and sacrifice for generations. That is why they put a face to the wines of Bodega Matsu, a Japanese word that means "to wait" and conveys the philosophy of this project. Waiting for nature to take its course, for the vineyards to turn 100, waiting for the perfect moment to open a bottle of wine.

With El Pícaro, El Recio and El Viejo we wanted to produce wines that preserve the traditional power of the Toro vineyards, but combining it with the freshness and elegance that characterizes all our wines.”
