Development and Aging
Manual harvest with a rigorous selection process, both in the field and in the cellar. Fermentation for 8 days with 2 daily pump-overs and at a controlled temperature (26º -28º). Maceration with skins for 21 days with light pump-overs. Aged for 16 months in French oak barrels first year with light pump-overs every 4 months.
