ELABORATION
100% Tinta de Toro variety from vineyards planted between 2000-2004.
Spontaneous natural fermentation in thermoregulated open stainless steel tanks.
Maceration for 12-14 days with two daily pump-overs and a délestage at the end.
As for the ageing: 50% spends 12 months in American oak barrels, 15% remains in 4000-litre foudres and 35% remains in tanks.
CURIOSITIES
In 2003 the first harvest of Corral de Campanas appeared, which is called "A Sexy Bull" due to its particular characteristics. A visually and aromatically attractive wine (red fruit) and with a very sweet palate.
The Quinta Quietud winery, located in Zamora, works its 26 hectares with a special respect for nature. Its wines benefit from organic cultivation only with native red grapes, manure fertiliser and treatments with plant and mineral infusions. They carry out the pruning and harvesting manually only in the mornings so that the grapes are in perfect condition.
A wine by Jean-François Hébrard, a winemaker of Bordeaux origin but with a long and successful career in the Rhône, who was made by his friends to discover the area and fell in love with and admired the potential of the Toro terroir, especially those old vines that, far from the river, impregnate their grapes with minerality and complexity by having to penetrate their roots deep into the soil to get water.
