Tasting notes:
Color: Bright pale yellow.
Nose: Intense aroma, with predominance of white flowers and herbaceous notes, over light aniseed and a mineral background.
Mouth: fresh, persistent and very pleasant.
Harvest and Aging:
The harvest is done by hand, in small boxes, which the mules are responsible for taking to the sidewalks of the vineyards. As a particularity of the Axarquía, each cluster is placed in the box in an orderly manner with the peduncle facing outwards. Each variety is fermented separately, spontaneously and in small steel tanks. Once the fermentation is finished, it is assembled and reared for 5 months in concrete truffle on its lees. The landscape of La Axarquía is characterized by steep slopes plagued by small vineyards. The poverty of the slate soils and the antiquity of the plantations, together with the heroic viticulture of the vineyards and mules of the area, make the productions small and of great quality. The grapes from La Raspa come from a group of small plots where freshness prevails.
Varieties somewhat unknown:
Muscat Alexandria: The Queen of La Axarquía, also known as Moscatel de Málaga. Considered one of the oldest breeds that remain unmodified genetically and still persist. It stands out for its great aromatic potential and freshness. Doradilla: Native to the Sierras de Málaga, with very little planted area. It is a subtle variety in aromas that in mouth contributes volume and some very interesting saline touches.
