Elaboration and Ageing:
The Romé, Syrah and Tintilla de Rota grapes are harvested manually from the vineyards of the Sierra de Cádiz and the Serranía de Ronda. In the glass it has a dark cherry colour, lively and brilliant. Aged for 12 months in French Allier oak barrels. Later rest during 12 months more in bottle.

The Papoya Negra that gives this wine its name and illustrates its label is a native Andalusian goat whose milk is used to make Payoya goat cheese in the Sierra de Cádiz and Serranía de Ronda.
