CATA's notes:
- Color: wine of great layer, cherry color with still slightly purple edging.
- Nose: elegant and deep, with notes of ripe black fruit that mix with the spicy varietal aromas and smoked oak barrels
- Mouth: Velvety, polished and ripe tannin, balanced and tasty. It is fresh, unctuous and elegant, with a very pleasant memory and high persistence. It is a harmonious and balanced wine.
Preparation and Aging: The grapes with which it is made
Fournier domain they come from plots located in a beautiful
river terrace at the foot of the Duero , river that accompanies us along more than 2 km in a meander that delimits the property naturally. The majority of the plots unleash their poor soils and their layer of surface boulders, which restricts vigor to the vines and helps to concentrate our grapes, and where 50% of which are formed in a traditional-style glass. It has
50 Ha of Ink from the Country with a
average age over 25 years and what in
some plots reaches
even more than 60 years old .
The harvest is done manually in small boxes and only the clusters are selected in the field, they are in perfect sanitary and ripe state. All the grapes pass through the selection table and continue to the warehouses through a conveyor belt, avoiding mechanical damage during concealment.
Each plot is made separately in small tanks. The cold pre-fermentation maceration is practiced with dry ice, to obtain a high extraction of sweet tannin and color before going to alcoholic fermentation. Alcoholic fermentation is carried out in a controlled manner in stainless steel tanks and wooden tubs, where daily traces are carried out that favor the extraction of sweet tannin and color. Each deposit is uncovered and goes into the barrel to make malolactic fermentation, where frequent batonages are performed to help the lees work.
All the wines that are part of this coupage passed
At least 12 months in French (80%) and American (20%) oak barrels. Curiosities: Since 1960 in the heart of the Ribera del Duero, it is at the end of a road that seems to lead nowhere. And there, on a closed meander of the Duero, stands the best of the vineyard and the cellar in which he laid his eyes, and later a contract on the table,
Gonzalez Byass .
THEY, day after day, year after year, their
winemakers pamper each vine and every step of the process to realize an exciting project.
