The winery and the vineyards
The winery is a construction of medieval origin, made of oak wood and local stone. Located in the village of A Míllara, in the heart of the Ribeira Sacra, it is a privileged enclave in the canyons of the River Miño. It is semi-buried, as a continuation of the natural slope of the land where it is located, which guarantees a constant temperature, in a natural way, during the whole year. As it is perfectly integrated with the vineyards, the deterioration in the transport of the grapes is minimised, and it has state-of-the-art advances and machinery. At Finca Míllara they make their own grapes and work the land as their ancestors did, by hand, with a plough, without herbicides, obtaining excellent quality, one and a half kilos per vine. The soil is made of soft oxidised slate with a 50% slope and little rain, which forces the roots of the vines to go deeper and thus extract all the potential of the "terroir". With this working methodology, they have achieved, over ten years, an area of 210,000 m2 of quality vineyards, in one of the best production areas of the Ribeira Sacra D.O. The elaboration A selection is made by hand before the pre-fermentation maceration to which they are subjected. Fermentation is very slow in small tanks. Depending on the wines they are intended for, they are fermented with or without a stem. All the wood used is French oak. The malolactic fermentations are carried out in tanks or barrels and the pastes are lightly lit to age the wines. Tasting Notes View: Clean and bright golden yellow colour. Nose: Intense and elegant aroma with aromas of white fruits and citrus with a mineral background. Palate: Tasty with good acidity and a touch of fat.
