ELABORATION
Manual harvest during the night in the vineyards of the house in Fitero.
After a gentle pressing and a natural clarification by means of cold, the must is obtained.
The fermentation, only of the free run juice, is carried out in stainless steel tanks and at a controlled temperature (between 14ºC and 15ºC), which facilitates the extraction and preservation of the primary aromas (fruity and floral) typical of the variety.
Racked, stabilized and bottled in its full youth.
CURIOSITIES
In 1989 Antonio Sanz fulfilled his dream of making his own wines in Navarra, after his entire life dedicated to the world of wine.
To achieve this, he soon realized that in addition to work in the winery, it was essential to care for and pamper his vineyards.
His sons took the reins and in 2007 the Viña Zorzal project began. In this project they rescue the autochthonous Navarrese varieties that had been so neglected and produce varietal wines that are valued for their authenticity and simplicity. In these early years, his work with Graciano began to stand out and receive recognition from the most important critics in the world of wine.
After this success with Graciano, the next step was to work with Navarra's most typical variety: Garnacha. On the one hand, they wanted to make a rosé like the old ones, authentic, without artifice, that of a lifetime. And on the other hand, making Garnacha wines with the complexity provided by old vines.
Rafael Reverte made the dream come true. He showed them very old abandoned vineyards in the municipality of Fitero, where the Ebro valley ends and the Iberian System begins. This is how the Viña Zorzal project was born, focused on the terroir, parcel wines that show the typicality of this very special area.
