Production and Aging:
90% Tempranillo and 10% Graciano.
Harvested by hand, first selection in the vineyard, second in the winery at the selection table.
All the grapes are destemmed and vatted by gravity in stainless steel tanks, daily punching is applied and they are macerated for 1-2 days.
A part of the wine undergoes malolactic fermentation in stainless steel tanks and approximately 15% in barrels, later it ages in used barrels for approximately 12 months and a small part of the wine does so in concrete tanks.
Curiosities:
All the fruit comes from different vineyard plots but all of them belong to the same municipality, Baños de Ebro. Thus, the wine transmits all the particular character of a town, as if it were a French vin de village. The plots are located at altitudes ranging between 420 and 480 meters. Its clay-calcareous soils in combination with the continental climate of Baños de Ebro offer the perfect setting for the vines to develop and mature slowly and fully. essential condition to obtain great wines. Some of them were planted in 1902 and others, later, from 2000.
